Preparation Tip:

The blinis taste very good when they are slightly warm. In the microwave, the blinis take less than 1 minute, and in the oven, the optimal temperature is 175°C and the blinis take approx. 6 minutes in a preheated oven.
Ideally, the blinis should only be slightly warm on the surface so that the caviar or crème fraîche does not melt but enhances their flavor.

Store in a cool place at 0°C to +6°C and consume within 2 days after opening.

Origin & history of blinis

Blinis originate from the Slavic region, particularly Russia, Ukraine, and Belarus. They are traditionally made from buckwheat flour and yeast (later more commonly from wheat flour—or a mixture of both) and are similar in size and thickness to crêpes. Their origins go back a long way – it is estimated that blinis were already being prepared over 1,000 years ago. This makes them one of the oldest and most important dishes in the traditional cuisine of parts of Eastern Europe, where they are served both sweet and savory. For example, with butter, honey, or jam, but also with sour cream, mushrooms, or pickled fish.
In Russia, blinis represent:

  • Sun and light (because of their round, golden shape)
  • Hospitality
  • Abundance and prosperity

They were deeply rooted in the annual cycle. Particularly famous is the festival of Maslenitsa, the “Butter Week” or “Pancake Festival,” which bids farewell to winter and welcomes spring. During this week, blinis were baked in large quantities and served with butter, cream, honey, fish, or caviar.

Development into the mini version

Mini blinis are a modern development of the traditional form. Instead of palm-sized, warm pancakes, smaller, evenly shaped variants were developed in the 20th century for buffets and upscale gastronomy—usually 4–6 cm in size.
The reason for this:

  • Fine products such as caviar or salmon require a subtle, neutral base that does not mask their flavor.
  • Small portions are perfect for canapés and finger food.
  • Mini blinis can be arranged uniformly and professionally, which is particularly important in hotels, catering, and delicatessens.
